Combine the oats, pistachios, pepitas, sunflower seeds, salt, and cinnamon in a large mixing bowl. In a separate bowl or measuring cup, whisk together the oil, honey, brown sugar, and vanilla. Pour the oil-honey mixture over the dry ingredients and stir gently until all the ingredients are evenly coated.
This recipe is perfect! I used coconut oil and honey, cashews, almond slivers, golden raisins, craisins, dark chocolate I cut into small chunks, vanilla, salt, cinnamon, ground ginger, and some pumpkin spice! Turned out super yummy. I ate most of it by itself but had a lot of it with my yogurt and fresh berries. I will definitely be making this again and again. Love the granola recipe. Make it with 3 cups oats, 2 cups faro, cup wheat berries , 1/2 cup basamati rice, salt, vanilla, 3/4 cup olive oil and maple syrup,use almond and pepitas, add a little balsamic vinegar and lemon juice
I made the granola bars last night. I omitted the peanut butter, reduced the sugar to 1/4 cup, kept the vanilla, used dried cranberries, cherries, golden raisins and almonds. I also added some Kashi 7 Whole Grain Puffs (just for fun). I have to say that my bars were not very moist once they had cooled. They crumbled so much in fact that I went with it and just made granola. I broke up the whole batch, put it in a 350 oven for another 40 minutes turning after 20. It tastes great but I will try the original recipe again.
In a large pot, heat coconut oil, almond butter and sweetener over medium-heat until the mixture comes to a boil, stirring constantly. Lower the heat and simmer until the mixture is slightly thickened, about 1-2 minutes. Remove pot from heat. Stir in vanilla and salt until combined. Using a rubber spatula, stir in the oats, flour, coconut, cinnamon and salt until dough is combined and sticks together. Add water and fold in the chopped pistachios.
Brown rice syrup can be found near the honey and syrups at most well-stocked grocery stores, or on Amazon. If you cannot find it or do not wish to use it, you may use an equal volume of mild honey or maple syrup. Your granola will not have many clusters, but it will still be delicious.
I made this granola recipe (I made two batches) for a large group event, and it turned out fabulous! I used whole almonds, pistachios and pepitas for the nuts, and dried apricots and dried cherries for the fruit. Everyone raved about it and asked me for the recipe!!
I decided to share my person granola recipe that I have tweaked and twisted around through the years. I really like adding as many goodies in my granola as possible. From batch to batch, they taste different depending on what I have on hand in my cupboards. This recipe is an adaptation of many many many recipes that I have used over the years. The main twist is that I use a trick from the Smitten Kitchen Cookbook, where an egg white is used to retain large clusters in the granola. The protein in the egg white are a great binding agent and cut down on the amount of oil needed.
The finely ground almonds and the maple syrup are what acts to bind the granola together. Be sure to chop the dried fruit into very small pieces. If too large, they will break apart from the granola clusters once baked. 2ff7e9595c
